The name Johnsen goes back to patronymic naming, see https://en.wikipedia.org/wiki/Patronymic. Since the name Osterbuhr is very unusual and difficult to pronounce in English-speaking countries, some Osterbuhr emigrants who had an ancestor named Jan (and there are many of them...) called themselves the son of Jan: Janssen. That still doesn't sound very English, so Janssen became Johnsen.
